Celiac disease is a congenital disease caused by gluten intolerance. In this gastrointestinal disease, small intestine villi are damaged and food absorption is impaired. Gluten is a protein found in most cereal such as wheat, barley and rye. If a person has a gluten intolerance, this protein can cause an immune response in small intestine. This reaction destroys intestinal villi and reduces the activity of intestinal enzymes. As a result, food absorption is impaired.

The most common symptoms include fatigue, weight loss, bloating and anemia.
